Here's what nobody told me on day one: the coffee was the easy part.
I spent my first weeks behind a bar trying to catch up on things I should have known walking in — the terminology getting shouted across the floor, the sanitation rules that weren't written anywhere, the unspoken dress code, the craft errors that make a manager quietly decide you're not going to work out.
