Or maybe you're simply a curious cook who's worked your way through Italian, Thai, Mexican, and you're hungry for something that most cookbooks haven't given you yet.

I've spent years sitting at kitchen tables across Central America, watching hands shape masa, listening to stories about what goes into a clay pot and why, learning which herb means celebration and which one means mourning. What struck me again and again is how little of this extraordinary culinary tradition makes it out into the wider cooking world, and how much is at risk of being reduced to a few tourist-menu dishes when it deserves so much more. That's what drove me to build this school, not just to teach recipes, but to hand you the full living context that makes them sing.
Here's what we know about learning to cook a new cuisine: the recipes alone are never quite enough. You need to understand why the annatto goes in when it does, what "cook until the fat separates" actually looks like, and what that dish meant at the table where it was born. So every lesson in this school is built around that kind of understanding, sensory, cultural, and technical at once.
