The curriculum
What's inside your school
5 modules · 16 lessons

The Foundation — Grip, Stance, and Board Setup
Before speed or precision comes control. This module covers the non-negotiable fundamentals that every technique in the course builds on — and the mistakes most home cooks don't know they're making.
- 1.1The Pinch Grip: Why It Changes EverythingIncluded
- 1.2The Claw Guard: Protecting Your Fingers Every Single TimeIncluded
- 1.3Board Setup, Stability, and Workspace FlowIncluded
Core Techniques — Chop, Slice, and Mince
The three techniques you'll use in 80% of your cooking. This module breaks each one down mechanically so you understand not just what to do, but why each motion works — and how to correct yourself when it doesn't.
- 2.1The Rock Chop: Your Everyday WorkhorseIncluded
- 2.2Clean Slicing: From Tomatoes to ProteinsIncluded
- 2.3Mincing Garlic and Herbs Like a ProIncluded
Precision Cuts — Dice, Julienne, and Brunoise
These are the cuts that separate a messy plate from a beautiful one — and they matter beyond looks. Uniform cuts mean uniform cooking. This module makes precision cuts accessible, not intimidating.
- 3.1The Perfect Dice: Small, Medium, and LargeIncluded
- 3.2Julienne: The Matchstick Cut for Stir-Fries and GarnishesIncluded
- 3.3Chiffonade and Fine Herb Cuts for Finishing DishesIncluded
Ingredient Masterclass — Breaking Down the Trickiest Prep Jobs
Technique in isolation is one thing. This module applies everything to the specific ingredients that stump home cooks the most — onions, garlic, butternut squash, and more.
- 4.1Onions Without the Frustration (or the Tears)Included
- 4.2Garlic, Ginger, and Other Small AromaticsIncluded
- 4.3Hard Vegetables: Butternut Squash, Cabbage, and Root VegetablesIncluded
- 4.4Proteins: Chicken Breasts, Fish Fillets, and MoreIncluded
Knife Care, Maintenance, and Building Lasting Speed
A sharp knife is a safe knife. This final module covers keeping your knives in peak condition and the deliberate practice method Nas uses with students to build lasting speed and muscle memory.
- 5.1Honing vs. Sharpening: What's the Difference and When to Do EachIncluded
- 5.2Storage, Cleaning, and Knife LongevityIncluded
- 5.3Building Real Speed: The Deliberate Practice MethodIncluded

Hi, I’m Nas the Chef, creator of Cooking With Love by Nas the Chef™.
I have been cooking since I was 5 years old, when I first stepped into a cooking class and fell in love with the kitchen. What started as curiosity became a lifelong calling.
I am a certified chef with culinary school training and over 40 years of cooking experience — from home kitchens to catered events, private dinners, and special meals prepared for people who still remember how the food made them feel.
One of the greatest honors of my culinary journey was catering a dinner for White House staff during Ramadan. That moment reminded me that food is never just food. It is service. It is memory. It is culture. It is love on a plate.
I cook the way I live — with heart, intention, flavor, and care. Whether I am feeding family, hosting dinner, catering an event, or teaching someone how to stop being afraid in the kitchen, my goal is always the same: make the food unforgettable and make the person cooking it feel capable.
Cooking With Love by Nas the Chef™ was created for everyday people who want real kitchen confidence. You do not need a fancy kitchen. You do not need expensive ingredients. You do not need to know all the chef words before you start.
You just need someone to show you what matters, explain it in plain language, and help you trust yourself.
That is what I am here to do.
Let’s cook with skill, soul, and love.
