If you've ever sat at a restaurant, tasted something extraordinary, a lamb tagine, a plate of kibbeh, a simple Greek salad with just-right olive oil and thought, I wish I could do this at home, and I wish I knew the story behind it then you already know exactly why we built this course.
We’ve spent years eating our way around the Mediterranean cuisine, not as a tourist ticking off landmarks, but as someone obsessed with what people cook on a Tuesday, what they put on the table when family comes, what they make for someone they love. And what we kept discovering was this: the recipes and the stories are inseparable. Once you know why preserved lemons exist in Moroccan cooking, you use them differently. Once you understand that kibbeh is a dish Lebanese families make together, your hands move differently when you shape it. The food changes when the culture comes with it.
This course is our attempt to give you both at the same time. We travel kitchen by kitchen, through ten of the world's most beautiful culinary traditions. Greece, Lebanon, Türkiye, Morocco, Southern Italy and Sicily, Spain, Israel, Egypt, Croatia and the Adriatic. In each place, we cook the dishes that matter: the ones that have been on tables for centuries, the ones families argue lovingly about, the ones that show you who a people are. And we don't just execute them, we understand them. I believe Dlayne would have Mediterranean cuisine three times a day, 7 days a week! She’s probably cooked everything in this course! We want to be honest with you about one thing: this isn't a course that hands you a shortcut. A proper moussaka takes time. A tagine rewards patience. Handmade pasta from Southern Italy is a little bit of a project. But that's exactly the point, these are dishes built around the Mediterranean idea that cooking and eating are worth slowing down for. What we will give you is confidence. A real pantry. A repertoire of foundational recipes that unlock everything else. And by the end, the ability to host a mezze table that stops conversation in the best possible way.
