A note from your teacher
Ivonne Ramos
If you've ever stood in a supermarket aisle genuinely unsure whether something is good for you — despite spending years trying to eat well — I want you to know that confusion is completely rational. The information environment around food is, frankly, a mess. One study says coffee causes cancer; the next says it prevents it. A diet that worked for your colleague does nothing for you. A product with "high protein!" on the front turns out to be mostly sugar. It's not a knowledge gap on your part. It's noise.
That's exactly why I built Nutrition Unlocked. Not to give you another set of rules to follow, but to hand you the tools to understand food for yourself — permanently. When you grasp how your body actually metabolises a carbohydrate, or why certain fats support your heart while others don't, or what a nutrition study can and can't tell you, the noise starts to quiet down. You stop reacting to every new headline. You start making choices from a place of genuine confidence.
What you'll find in this course is grounded in real evidence — the kind that holds up under scrutiny, not the kind that's funded by a brand with a product to sell. We cover the full picture: macronutrients, micronutrients, food labels, meal building, and the critical-thinking skills that let you evaluate anything new that comes along. We also get practical. Understanding digestion is interesting; knowing how to build a satisfying plate for a weeknight dinner, a restaurant meal, or a family gathering is useful. We do both.
I believe the best thing I can do for your health isn't to tell you what to eat — it's to make sure you never need to ask a stranger on the internet that question again. The goal is for you to finish this course feeling like you have a trusted, knowledgeable friend in your corner who happens to understand nutrition deeply. Someone calm, not alarmist. Someone who deals in evidence, not trends.
You deserve to feel at ease around food. Come and learn how it actually works — I think you'll be surprised by how approachable (and genuinely interesting) the science really is. I can't wait to be your guide through it.
