Matcha Foundations — Know Before You Brew
Before touching a whisk, students build the essential knowledge base that underpins every recipe in the course. This module covers matcha's origins, quality grading, sourcing, and the tools and environmental variables (water temperature, ratios) that make or break a cup. Getting this right first prevents bad habits from forming and ensures every subsequent lesson starts from a solid, informed baseline.
- 1.1Grades, Origins & What's Actually in Your TinIncluded
- 1.2Tools of the Trade — Choosing, Using & Caring for Your EquipmentIncluded
- 1.3Water Temperature & Ratio MasterclassIncluded
The Perfect Matcha Base — Traditional & Modern Techniques
With foundations in place, students now focus entirely on mastering the matcha base itself — the pure, whisked preparation that sits at the heart of every drink in the repertoire. Both the traditional Japanese tea ceremony approach (usucha and koicha) and modern shortcut methods are taught so students can choose the right technique for any context, from a mindful morning ritual to a busy café prep line.
- 2.1Traditional Ceremonial Matcha — Usucha & KoichaIncluded
- 2.2Modern Everyday Preparation MethodsIncluded
Milk, Foam & the Latte Foundation
This module bridges the pure matcha base into full latte construction. Students learn to steam and froth dairy and non-dairy milks to café quality without professional espresso machines, understand why different milks behave differently, and assemble a well-layered, balanced hot matcha latte. Mastering this before the recipe repertoire module means students can execute every latte-based drink in Module 4 with confidence.
- 3.1Steaming & Frothing Milk Without a Café MachineIncluded
- 3.2Dairy-Free Milks — Choosing & Frothing Each OneIncluded
- 3.3Building the Classic Hot Matcha LatteIncluded
The Drink Repertoire — 10+ Recipes Across Every Style
This is the practical heart of the course. With a mastered base, frothed milk, and balanced fundamentals already in place, students now build a full repertoire spanning iced, blended, sparkling, and creative specialty drinks. Each lesson isolates a distinct style category so students develop category-specific technique (e.g., dilution management for iced drinks, texture control for blends) before combining them freely. By the end, every student has personally made all 10+ recipes.
- 4.1Iced Matcha DrinksIncluded
- 4.2Blended & Frozen Matcha DrinksIncluded
- 4.3Sparkling & Unexpected Matcha DrinksIncluded
- 4.4Seasonal & Creative Specialty RecipesIncluded
Flavor Balancing — Sweeteners, Pairings & Garnishes
This module is deliberately placed after the full recipe repertoire so students can apply balancing principles retroactively to every drink they have already made, and immediately test new combinations. Students learn the food-science reasoning behind why certain sweeteners, flavor companions, and garnishes either harmonize with or fight against matcha's grassy, umami bitterness — giving them a transferable framework, not just a list of rules.
- 5.1Sweeteners & Syrups — The Right Sweetness for Every DrinkIncluded
- 5.2Flavor Pairings That Work (and Why)Included
- 5.3Garnishes That Finish the DrinkIncluded
Style, Shoot & Share — The Social Media Aesthetic
The final module transforms a well-made drink into a shareable, brand-worthy image. Students learn photographer-level principles adapted for food and beverage content — light quality, prop selection, composition rules, and post-processing — without needing a professional camera. This module is placed last because students now have a full repertoire of polished, garnished drinks to shoot, making every exercise immediately applicable and portfolio-worthy.
- 6.1Light, Props & Setting Up Your ShotIncluded
- 6.2Composition, Angles & Telling a StoryIncluded
- 6.3Editing & Building Your FeedIncluded

Marvin
If you've ever made a matcha at home and thought this doesn't taste anything like the one from that café — I want you to know that's not a you problem. It's a knowledge gap, and it's completely closeable.
I started The Matcha Bar because I kept seeing the same frustrations play out: people buying beautiful ceremonial-grade powder and accidentally burning it with boiling water. People attempting dairy-free lattes that came out watery and flat. People following a recipe but ending up with something too bitter, too sweet, or just… off. The problem wasn't effort. It was that nobody had sat down and explained the why behind each step — the temperatures, the ratios, the milk choices, the balance.
That's what this school is built to do. We start with the foundations — understanding what's actually in your tin, how grades differ, and how water temperature alone can transform the same powder from sharp and grassy to smooth and sweet. From there, we build up through traditional techniques (yes, we do proper usucha and koicha, because knowing the source changes how you craft everything else) and into the modern everyday methods you'll use on repeat. Then milk, foam, flavor balancing, and a full repertoire of 10+ recipes across every style — iced, blended, sparkling, seasonal. By the end, you'll have a working craft, not just a few recipes.
I also believe that a drink this carefully made deserves to look the part. So we finish with a module on styling and photography — because once you've made something genuinely beautiful, you should be able to capture it. Natural light, composition, a bit of editing: nothing complicated, just enough to make your feed feel like you made this.
You don't need barista experience, an expensive machine, or even a great matcha setup yet — we cover the tools and sourcing so you can build that as you go. What I ask is that you bring a little curiosity and a willingness to slow down and really taste what you're making. That's where the craft lives. Come join me behind the counter — I'll have the matcha ready.
