Rabiah Abdussabur

Rabiah Abdussabur

If you've ever stood over a simmering pot and felt, instinctively, that what you were making was medicine — I want you to know: you were right.

I've spent years sitting at the crossroads of two worlds that most people think have nothing to say to each other: the ancient, poetic system of Unani-Tibb medicine, and the rigorous, ingredient-obsessed world of modern culinary science. What I found at that crossroads wasn't conflict — it was an extraordinary conversation. The classical hakeems who wrote about the heating quality of ginger and the corrective bitterness of fenugreek were mapping the same terrain that food scientists now describe in terms of gingerols, glutamates, and the gut-brain axis. The vocabulary changed. The wisdom didn't.

But I also know how overwhelming this territory can feel from the outside. Unani-Tibb has a language all its own — humours, mizaj, the six tastes — and it can feel inaccessible, even mystical, if nobody takes the time to walk you through it with warmth and practicality. At the same time, "eat for your gut health" advice online is everywhere and somehow feels like it's for nobody in particular. What I set out to build in Umami Tibb is something genuinely different: a school where ancient taste theory and fermentation science, healing spices and flavor chemistry, the four humours and the five-day meal plan all live together in one coherent, livable practice.

In this school, I'll teach you to taste with intention — to train your palate as a diagnostic tool, the way Unani physicians trained theirs. I'll show you how a bowl of slow-simmered kishk can restore a depleted constitution and achieve depths of umami flavor that rival any restaurant broth. I'll help you discover your own temperament and cook accordingly — not as a rigid prescription, but as a generous framework for understanding what your body is asking for in each season of the year.

The food we'll make together is deeply, unapologetically delicious. Healing food should be. Come to the table — I've kept a seat for you.
